Chicken Curry

This delicious curry includes quality protein from free-range chicken that helps to keep our body strong. The healthy fats from the coconut milk ensure our blood sugar levels are stabilised, provides energy for our brain to function and supports healthy balanced hormones. Plus loads of fresh veggies that provides our body with energy and vitality.
 

Ingredients (serves 4)

* 2 free-range or organic chicken breast
* 1/2 onion
* 1 broccoli
* 2 organic corn cobs (always buy organic corn as it is the most genetically modified vegetable)
* 2 carrots
* 1/2 kale
* 1/2 red capsicum
* 1/4 cup cashew
* 1 can organic coconut milk
* Squeeze of half a lemon
* 2 tbsp curry powder
* Sprinkle of chilli flakes
* Salt & pepper

Method

1. Saute the diced onion and diced chicken in a pan with butter or coconut oil until brown.
2  Add all remaining ingredients plus 1/4 cup water rand cook on low with lid on the pan, until veggies have softened. 
3. Serve and enjoy!
