Coconut & Berry Muffins

 

These delicious muffins are gluten-free, dairy-free and are irresistible straight out of the oven. 
Perfect for your weekly snack!

 

Ingredients:

  • 2 1/2 cups of almond meal
  • 1/2 cup of shredded coconut
  • 1/2 cup coconut flour
  • 1 tsp baking powder
  • 1/2 tsp ground ginger
  • 1/2 tsp cinnamon
  • 4 tbsp chia seeds
  • 4 tbsp pure honey
  • 6 eggs
  • 1 cup berries
  • 5 tbsp melted coconut oil
  • 1 tbsp apple cider vinegar
  • Pinch of sea salt

Method:

  • Preheat oven to 180 degrees
  • In a large bowl, mix dry ingredients
  • In  a separate bowl, mix wet ingredients (not the berries)
  • Combine the wet and dry and mix well
  • Add the chopped berries and mix softly so the berries do not squash
  • Spoon the batter into muffin cups and top wtth shredded coconut
  • Bake for 30 minutes
