Coconut & Berry Muffins
These delicious muffins are gluten-free, dairy-free and are irresistible straight out of the oven.
Perfect for your weekly snack!
Ingredients:
- 2 1/2 cups of almond meal
- 1/2 cup of shredded coconut
- 1/2 cup coconut flour
- 1 tsp baking powder
- 1/2 tsp ground ginger
- 1/2 tsp cinnamon
- 4 tbsp chia seeds
- 4 tbsp pure honey
- 6 eggs
- 1 cup berries
- 5 tbsp melted coconut oil
- 1 tbsp apple cider vinegar
- Pinch of sea salt
Method:
- Preheat oven to 180 degrees
- In a large bowl, mix dry ingredients
- In a separate bowl, mix wet ingredients (not the berries)
- Combine the wet and dry and mix well
- Add the chopped berries and mix softly so the berries do not squash
- Spoon the batter into muffin cups and top wtth shredded coconut
- Bake for 30 minutes
